I’ve had the distinct pleasure this year of taking part in some amazing learning experiences in the world of education. They have allowed me to continually reignite my passion for teaching and have turned me into a huge educational technology nerd.

 

My favorite event at every education conference I’ve attended this year is the “Demo Slam.”

 

Here’s how it works: you have a brief time, usually a minute or two, to share with the audience your amazing, earth-shattering, life-altering technology tool. With such a short amount of time, you have to speak quickly and demonstrate high energy and excitement for your product. And, above all, you must cap your mind-blowing minute by enthusiastically exclaiming, “SLAM!”

 

More than once, that word has left me completely speechless. I listen intently for one minute, trying to keep up with the volumes of information flowing into my brain. Gears turn, inspiration builds, then… SLAM! I am left with only a single thought in my head: Mind. blown.

 

There have been several instances in the past few months of my life that have left me with this feeling (and not all of them are tech-related). Topping my list of eye-opening personal slams are:

  1. Technology hacks that save me tons of time and paper by automatically scoring quizzes, ingesting electronic assignments, and achieving world peace (okay, maybe not that last one, but I’m not exaggerating when I say it has been life-changing). SLAM!
  2. This winter, I got my first-ever very own set of skis and ski boots. Donning my new gear for the first time felt like being cloaked in a superhero suit, almost instantly transforming me from a relatively timid skier to one who no longer flinches at moguls. SLAM!
  3. My eyes and stomach were opened to the world of overnight oats. Before bed, throw all of your favorite ingredients in a mason jar and pop it in the fridge overnight. When you wake up, instant breakfast. SLAM!

 

Honestly, I can’t believe I didn’t discover the concept of overnight oats until very recently. I am an oatmeal fiend, breakfast enthusiast, and completely in love with how simple overnight oats are to prepare. During a month filled with early-morning meetings, overnight oats saved me (and hours of sleep). Throughout ski season, I fortified myself with overnight oats in the car while waiting for the chair lifts to open. With minimal prep time before you head to bed, you can have a killer breakfast ready with absolutely zero effort in the morning. Just like Mark Bittman’s pie, these overnight oats are packed with creamy sweet potatoes, nutty coconut, and warming spices like cinnamon and ginger. Sweetened with maple syrup, these Coconut Sweet Potato Overnight Oats are refined-sugar free. Nutrient-packed chia seeds add creaminess to the oats after an evening of soaking up coconut and almond milk. Coconut Sweet Potato Overnight Oats

Coconut Sweet Potato Overnight Oats

Packed with creamy sweet potatoes, nutty coconut, and warming spices like cinnamon and ginger, these Coconut Sweet Potato Overnight Oats incorporate the flavors of coconut sweet potato pie without the guilt and preparation time.

Ingredients

  • ½ cup regular rolled oats
  • ¼ cup sweet potato puree
  • 2 tablespoons unsweetened, shredded coconut
  • 2 tablespoons chopped, toasted pecans
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup
  • ¼ teaspoon cinnamon
  • ¼ teaspoon ground ginger
  • ⅛ teaspoon ground nutmeg
  • Pinch of ground cloves
  • Pinch of salt
  • ¼ cup light coconut milk
  • ½ cup vanilla almond milk (or milk of your choice)

Instructions

  • To make the sweet potato puree, pierce a sweet potato with a fork several times, wrap in a paper towel, and microwave for 6-8 minutes, or until tender. Carefully remove it from the microwave, cut in half lengthwise, and let cool. Scoop out the flesh into a bowl and mash until creamy. Alternatively, you can peel and cube a sweet potato and boil until tender. Reserve ¼ cup of the puree for your oats and put the rest in an airtight container to store in the fridge for another serving.
  • In a mason jar or bowl, combine all of the ingredients. Screw on the cap and shake until the oats are completely moistened and ingredients appear distributed throughout. If using a bowl, stir ingredients together and cover tightly with plastic wrap. Place in refrigerator overnight (or for at least 6 hours). If desired, add additional milk to serve. If you want to take a little chill off, microwave for 1 minute.
